Pumping Up With Pumpkins

Every season brings along its special personality. It’s signature weather, smells, pleasures, customs and foods. One of the main products famous of the fall are pumpkins. Most of us marvel at their different sizes, shapes and colors. We decorate our homes with them and enjoy the aroma of pumpkin pie, but pumpkins’ benefits are more than just what meets the eye. Talking about eyes, one cup of pureed pumpkin has a whooping 254% of our daily need of vitamin A. Vitamin is an essential vitamin for healthy eyes, but it also plays a role in producing healthy cells in the body because vitamin A interacts with DNA receptors. It also helps maintain a healthy immune system through promoting healthy skin and lymphocytes which protect our bodies from infection. Vitamin A also plays a role in reproductive and bone health.

If pumpkin’s wealth in vitamin A is not convincing enough, it is also rich in fiber, vitamin E, C, B6, Thiamin, Niacin, Folate, Iron, Magnesium, Phosphorus, Riboflavin, Potassium, Copper and Manganese. In a “pumpkin shell,” this gourd-like squash is full of healthy vitamins and minerals making not only beautiful to look at but beneficial to eat.
